| 30種の種子に含まれるポリフェノール含量と1,1-dipheny-2-picrylhydrazyl(DPPH) 消去活性、 還元力および百粒重、種皮色との関連性について検討した。30種の種子のポリフェノール含量とDPPH 消去活性および還元力との間には、それぞれ高い正の相関関係のあることを明らかにした。 また、赤色系種子のみ明度(L*値)、赤味度(a*値)、黄味度(b*値)、彩度(C*値) とポリフェノール含量との間にそれぞれ高い正の相関性のあること、茶、黄色系種子ではL*値とポリフェノール含量との間に高い負の相関性のあることを明らかにした。調査した種子の中でレンゲ、アカクローバ(メジウム)、ダッタンソバ、ナタネはポリフェノール含量が高いが、百粒重は小さい。 手亡、黒金時、白小豆、アカネ大納言、ユキシズカ、ヘアリーベッチ、アワ、ヒエ、蕎麦、黒ゴマのポリフェノール含量と百粒重はともに低い値であった。 Thirty kinds of seeds, we concerning the correlation of polyphenol content and DPPH radical scavenging, reducing power, weight of hundred seeds, coat color.
